One of the best post-gym meals? An upgraded omelette packed with flavour and one of the best bio-available protein sources, eggs!

2 tbsp sour cream
Salt & pepper
1 cup spinach, thinly sliced
½ cup marinated black olives
1 bunch parsley, finely chopped
100g goats cheese
2 tbsp extra virgin olive oil
Turn the grill on in the oven.
Crack eggs in a large bowl and whisk in the parsley and sour cream. Add in the spinach and olives.
Heat olive oil in an oven-proof pan and add the egg mixture, covering evenly across the base. Sprinkle the goats cheese on the top and add to the oven to set.
Garnish with truffle oil, rocket and sliced radishes.
