Prawns wrapped in prosciutto is a great starter, cooks in minutes and perfect for entertaining. This appetizer goes really well with salsa and is quick and easy to put together. Be sure to cook it in a grill pan to get those lovely grill marks and added flavour.

Ingredients:
10 prawns, shells removed and deveined
100g prosciutto
Salt & pepper
1 tsp extra virgin olive oil
Salsa
1 large spring onion, finely chopped
1 tbsp lemon juice
1 tbsp Extra virgin olive oil
Salt & pepper
Method:
Wrap prawns in strips of prosciutto. Place on a skewer, all facing the same way, you should be able to fit 5 prawns on each skewer. Season both sides generously with pepper and a small pinch of salt. Drizzle a tiny amount of extra virgin olive oil and spread over both sides.
Place the skewers on a hot grill pan, cook for 3-4 minutes on each side.
In a small bowl stir the spring onions, lemon juice, salt, pepper and extra virgin olive oil.
